The most tender steak on the animal, and it eats like it — fork-soft, lean, and mild enough to let the beef speak for itself. Two steaks to a pack; sear hot and fast, rest it, and keep the seasoning simple. Raised holistically on our family farm near Rosthern, without antibiotics or added hormones.
